Any of you who have tasted Richard’s Summer Sausage are starting to salivate at the thought. Any of you who have not yet tasted it, well, you are missing something most excellent!
Matt, Forrest, Bob, Ernie and Garland arrived last night, we got up early, ate a hearty breakfast, and they started in! Ernie and Matt have the smoker fires going while Richard mixed up the first batch. Here’s Richard putting the meat ito the “pooper” (which he designed just for the summer sausage process), Garland pressing the meat down into the casing, Bob easing it all into the casing, and Forrest getting ready to clamp each tube. I’ll try and get more photos as the day progresses. |
